Mix Vegetable Rice
This is the easiest and delicious recipe for Mix Vegetable Rice. It is a perfect lunch recipe with mixed vegetables.
INGREDIENTS
- Onion ----- 1 cup
- Oil ----- 1 cup
- Carrots ----- 1 cup
- Potatoes ----- 1 cup
- Capsicum ----- 1 cup
- French Beans ----- 1 cup
- Cauliflower ---- 1 cup
- Peas ----- 1 cup
- Tomatoes ----- 1 cup
- Green onion ---- ½ cup
- Green coriander ----- ½ lump
- Mint ----- ½ lump
- Green chilies------ 10-12
- Ginger Garlic Paste ---- 1 tablespoon
- Boiled rice ----- 1 kg
- All spices ---- as needed.
- Green cardamom ----- 6 pieces
- Cumin ----- 1 teaspoon
- Aniseed flower ------ 3 pieces
- Crushed red pepper ----- 1 tablespoon
- Turmeric powder ---- ½ teaspoon
- Salt ----- to taste
- Knorr Chicken cubes ----- 2 pieces
- Roasted cumin seeds ----- a teaspoon
- Nutmeg Jawtri Powder ----- ½ teaspoon
- Plum (Aloo Bukhara) ---- ½ cup
- Lemon juice ----- ¼ cup
- Food color (yellow) ----- ¼ cup
- Kewra water ----- 1 tablespoon
- Milk --------------- 2-3 tablespoons
- Salad ----- for serving
METHOD
- Heat three-quarter cups of oil in a pan.
- Then brown the onion and take out half of the onion.
- Add ginger-garlic paste to the rest of the onion in a pan.
- Add red chili, ground coriander, ground turmeric, chicken cubes, salt, chopped tomatoes, and mix well.
- Cut all the vegetables into cubes and mix them in already prepared gravy.
- Add chopped mint and green chilies into the gravy and fry for 2-3 minutes.
- Boil rice with hot spices, cumin seeds, almond blossoms, bay leaf, and salt and leave in a bowl.
- Put a layer of vegetable gravy in a large pot.
- Layer the rice on top, finally add the curry, milk, yellow color, and fried onion, add a ¼ cup of oil and keep it on low heat for 5 to 10 minutes.
- Mix Vegetable Rice is ready to eat.
- Serve it with raita.
